There are excellent staff, including 2 chefs, wait and bar staff, all of whom are on contract to Tamarind House from the Philippines, (9 in total). Some have just renewed for a further 3 years, some still have 2 years remaining on their contract, 2 have just arrived with a fresh 3 year contract) so new operators will have a guaranteed professional staff structure to assist them and help make their lives run smoothly.
There are also part-time Cook Island workers, together with a Cook Islands accounts clerk/personnel manager.
